Delicious. It am I glad I’m your neighbor. The best carrot cake ever. My husband said he has never tasted any other carrot cake thus moist.

Hi Jan,
Yes, if you have the food processor with the grater attachment that would work beautifully. In fact, I think I need one of those attachments. I hope you love the cake as much as we do. Just a note that the recipe does make a lot of frosting. So, if you want to pipe the cake and add more frosting in between layers, go with the original amounts.I always like a lot of frosting and have leftovers, but that’s my quirk! 🙂 Otherwise I would suggest you half the frosting.
