Hi Paula,
So glad to hear from you. I need to answer your excellent questions in my post. So, roll out the dough so that it&#039;s pretty thin. The thicker you make it, the thicker the cookie. You&#039;ll be using two cookies with jam in the middle, so it tends to get pretty tall. 

Also, add the powdered sugar after the cookies are baked and cooled. And when freezing, I would not place the jam on them but instead, store the cookies. Then when bringing them out of the freezer, thaw them and build them with the jam.
