Peach Cobbler with Almond Cookie Dough Recipe

This delightful and refreshing recipe combines summer peaches topped with a tasty almond cookie dough. This cobbler is a new version of subtle almond flavor and peaches. Top with a dollop of vanilla ice cream and it is the best summer treat.

Equipment

  • 12"x 9" x 2" glass baking dish

Ingredients

Peaches

  • 5 peaches peeled and sliced
  • 2 tbsp sugar

Crumble Topping

  • 1 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 tsp almond extract
  • 2 cups flour
  • pinch of salt
  • 1/4 tsp cream of tartar
  • 1 tsp baking soda

Instructions

Peaches

  • Peel peaches and slice all five peaches.
  • Place peach slices on the bottom of a baking dish.
  • Sprinkle 2 tablespoons of sugar over the peaches and mix.

Almond Crumble

  • Cream Crisco and sugar until fluffy.
  • Add the egg and extract, and beat well.
  • Sift dry ingredients and add to cream mixture.
  • Layer cookie dough on top of the peaches and cover thoroughly.
  • Bake in a 375-degree oven for 40 minutes.
  • Take out fo the oven and cool on a cookie rack. Serve with a dollop of vanilla ice cream.
