Dragon Fruit Refresher Drink

Now that summer is around the corner, and I always crave a nice cold fruity drink. Starbucks has this drink, Dragon Fruit Refresher, on its menu, and I came up with my version. I created a drink that includes coconut milk, apple and mango juice, agave syrup, dragon powder, and fruit.

Ingredients

  • 1 cup apple juice
  • ½ cup mango juice
  • 1 tbsp agave syrup you can use honey
  • 1 tbsp pink dragon fruit powder
  • 1 tbsp coconut milk
  • 1 cup slushed ice

Instructions

  • Mix the agave syrup, apple, and mango juice in a pyrex measuring cup.
  • In a small glass mix, dragon fruit powder with a couple of tablespoons of the apple mango juice mixture. Mix the powder thoroughly with the juice. It will thicken as you mix it.
  • Blend the dragon fruit with the apple and mango juice. Mix thoroughly.
  • Add slushed ice in two glasses.
  • Pour the drink mixture into the two glasses.
  • Add the coconut milk to the dragon fruit drink. If you like, you can froth the coconut and add it to the rest of the ingredients. Or add it to the dragon fruit drink and mix it all.
