Ingredients

Filling

  • 3 apples 3 to 4 apples peeled, cored, and sliced
  • cups blueberries
  • cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp ground cardamom optional
  • 2 tbsp cornstarch
  • ½ cup candied ginger Chopped ginger finely. It is an optional ingredient.

Topping

  • ½ cup flour
  • ½ cup brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter Cold and cubed.
  • 1 cup old-fashioned oats

Instructions

  • Preheat oven to 350°

Fruit Filling

  • Mix the granulated sugar, cinnamon, cardamom, and cornstarch in a small bowl.
    Combine the sliced apples and blueberries in a large bowl with the sugar mixture. Next, add lemon juice, vanilla extract to the fruit. Mix well until the fruit is coated. Gently fold in the finely chopped candied ginger.
    Transfer the fruit mixture to a greased 8×8-inch baking dish or a similar-sized oven-safe dish.

Topping

  • In a separate bowl, prepare the crisp topping.
    Mix the flour, brown sugar, cinnamon, and salt. Next, add the cold butter. Use a pastry blender or hands and cut in the butter. Add oats, and blend in with your fingers.
    Place the crisp topping evenly over the fruit mixture in the baking dish. I broke up the crisp topping into chunks.

Bake Crisp

  • Place the baking dish on a baking sheet to catch any potential drips and bake in the oven for 40-45 minutes until the topping is golden brown and the filling is bubbling.
    When the crisp is done, remove it from the oven and allow it to cool for a few minutes before serving.
