The Best Chunky Oatmeal Cookies

Ingredients

  • 2⅔ cup butter room temperature
  • cup brown sugar
  • 3 eggs
  • 3 tbsp honey
  • 1 tbsp vanilla
  • tsp salt
  • 4 cups flour
  • 3 pounds old fashioned rolled oats
  • ½ cup raw sugar optional

Instructions

  • Preheat oven to 350°
  • Line cookie sheets with parchment paper.
  • Cream butter, sugar in a mixing bowl; add eggs, honey, vanilla, and salt.
  • At this point, I transfer the dough to a big stockpot.
  • Work in flour and oats with your hands.
  • Add nuts, dried fruit, and chocolate chips if desired.
  • Shape into large balls, like 1-2 inches.
  • Press into a flat shape about ¾ inches high. We flatten them with the bottom of a glass that is dipped in raw sugar.
  • Bake 15 minutes until done.
  • Cool on wire racks.
