Lemon Cookie Dough 1¼ cup all-purpose flour 1 tbsp cornstarch ¼ tsp baking soda ¼ tsp salt 6 tbsp unsalted butter softened ½ cup granulated sugar 1 egg yolk (or 1 small egg for a slightly softer cookie) ½ tsp vanilla extract 1½ tsp lemon zest 1 tbsp fresh lemon juice Cookie Icing 1½ cups powdered sugar 3 tbsp fresh lemon juice (adjust for consistency) 1½ tsp lemon zest
Cookie In a medium bowl, whisk together flour, cornstarch, baking soda, and salt.
In a large bowl, cream butter and sugar until light and fluffy (about 2–3 minutes).
Beat in the egg yolk, vanilla, lemon zest, and lemon juice until combined.
Add the dry ingredients to the wet mixture and stir just until incorporated. Do not overmix.
Scoop dough into tablespoon-sized balls and place 2 inches apart on the baking sheet.
Bake for 10–12 minutes , until edges are set but centers still look slightly soft.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Lemon Icing In a small bowl, whisk together powdered sugar and lemon juice until smooth.
Add zest and mix.
Generously drizzle or spread over cooled cookies. Allow to set for 15–20 minutes.
