Equipment

  • mini waffle maker

Ingredients

Waffle Batter

  • ½ cup flour
  • 2 tbsp sugar plus 2 tsp
  • ½ tsp baking powder
  • tsp baking soda
  • tsp salt
  • tsp ground nutmeg
  • pinch cinnamon optional
  • 1 egg
  • 6 tbsp buttermilk
  • 1 tbsp sour cream
  • ¼ tsp vanilla extract
  • 1 tbsp unsalted butter melted
  • vegetable oil for frying

Glaze

  • 1 cup powdered sugar
  • 2 tbsp milk or cream
  • ½ tsp vanilla extract

Instructions

Waffles

  • In one bowl, whisk together the flour, sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
  • In a separate bowl, beat the egg, then mix in the buttermilk, sour cream, vanilla extract, and cooled melted butter.
  • Stir wet into dry until just combined (thick batter).
  • Plug in your waffle maker and let it heat fully. Lightly grease with nonstick spray or butter. Makes five mini waffles.
  • Heat oil (about an inch thick) in a small pan to 350°F. Fry each waffle for 30–45 seconds per side until deep golden and crisp. Drain on a paper towel.
  • Bake for Crispness: Transfer fried waffles to a baking sheet with a rack and bake at 350°F for 15 minutes.

Sugar Glaze

  • In a small bowl, add powdered sugar and vanilla extract.
  • Stir in milk or cream. Whisk until smooth.
  • For a thicker glaze (more like Krispy Kreme style), add a little more powdered sugar.
For a thinner glaze (light drizzle), add a few drops more milk.
  • Dip the top of each waffle doughnut into the glaze, or spoon it over lightly.
Place on a wire rack so excess glaze drips off and the coating sets.
