Instructions
Toast the spices.In a small dry skillet over medium-low heat, toast the ground cinnamon, ginger, and nutmeg for 45 seconds, stirring constantly, until fragrant. Remove from heat immediately. This small step wakes up the spices so they taste bright and warm instead of dusty.
Make the graham cracker crumble.In a small bowl, mix crushed graham crackers, melted butter, and brown sugar until crumbly and evenly coated. Set aside as a topping — no baking required.
Mix the oat base.In a bowl, stir the room-temperature cream cheese until smooth. Add the sweetened condensed milk and stir until smooth. Add the pumpkin puree and stir until combined. Pour in the milk and mix thoroughly. Add the toasted spices and combine. Finally, stir in the sea salt, vanilla extract, oats, and chia seeds until everything is fully combined.
Chill.Transfer the oat mixture to a container, cover, and refrigerate for at least 4 hours, ideally overnight.
