Ingredients

  • ¼ cup shortening
  • ¼ cup butter room temperature
  • ½ cup creamy peanut butter
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 egg
  • cup flour
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt

Instructions

  • Preheat the oven to 375°F about ten minutes before you start baking.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  • Roll the dough into small balls about 1 inch in diameter and place them on a lightly greased baking sheet. If you like you can roll the balls in raw sugar.
  • Use a fork to press down on each ball, creating a crisscross pattern on the top.
  • Chill the dough balls in the refrigerator for at least an hour to allow the flavors to meld and the dough to firm up.
  • Bake the cookies for 10-12 minutes or until the edges are golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
