Almond Cookies are my family's favorite cookie. This recipe comes from my mom. It is easy to make and is a delicious and light cookie.
 
So, now that autumn has arrived, and the kids are back to school, I’m in the mood to bake cookies.
 
I like to make fresh cookies for my kid’s lunches, and these almond cookies are always a favorite in our house! Since this is my mother’s recipe,  I thought it would be nice to name them after her.
 
She would be so tickled to know that her baking legacy lives on.

So, I remember her packing them in my lunch, and all my friends would want to swap with me.  These cookies were such an incredible treat that I didn’t usually trade them with my friends.
 
Also, the cool thing about them is that they freeze well, so make a double batch and freeze some for later. You can freeze the dough or the baked cookie, whichever suits your fancy.

Almond Cookies are my family's favorite cookie. This recipe comes from my mom. It is easy to make and is a delicious and light cookie.

Ingredients

  • 1 cup Crisco
  • 1 cup Sugar
  • 1 Egg
  • 1 tsp Almond Extract
  • 2 cups Flour
  • Pinch of Salt
  • ¼ tsp Cream of Tartar
  • 1 tsp Baking Soda

Instructions

  • Cream Crisco and sugar until fluffy.
  • Add egg and extract, and beat well.
  • Sift dry ingredients and add to the cream mixture.
  • Shape into ½ inch balls and place on an ungreased cookie sheet. Bake in 375° oven for 12-15 minutes.
  • Take out of the oven and place warm cookies on cookie rack.

I hope you try these baking these cookies! They are delicious and so light and flaky. There is a danger that you can’t stop eating them. They have a deceptive quality since they are so airy and flaky it feels like you aren’t eating too many.
 
So, this recipe meets my three requirements for a good cookie. It is simple to make, yummy, and bakes the same every time. This recipe isn’t a complicated cookie, and they come out of the oven, all looking the same every time.

My mom recently passed away so even more, I love that I can pass along her recipes. She loved baking when she was younger. I’m carrying on her legacy. I only wish, is that she knew that I named her cookie after her and that many of you are enjoying her recipe!

    I make a lot of cookies and am always trying a new recipe. Made these beautiful almond cookies a couple of days ago, and my husband and I agree that these may be the best cookies I have ever made. I did have to use butter because I was out of Crisco, but honestly, the cookies could not have been better, or at least I can’t imagine how they could have been any better! I also pressed a whole almond into each little ball of dough before baking just because that’s how I remember the almond cookies from a wonderful little Chinese takeout when I was a kid. Definitely a keeper and a cookie I’ll be making probably way too often!!!

    I’m disabled and I’m and get tired very easily so I’m wondering if this almond cookie dough can be made ahead of time wrapped and frozen for Christmas cookies that only require cutting and baking?

      Hi Corinne,
      I’ve made the dough and frozen it, and it does fine! Yes, wrap it well and then store it in an airtight container. I also made the cookies and froze them, and they held up to the freezing. This recipe requires that you roll them into a ball; I hope you can do that. Thanks so much for your question, and let me know if you have any other questions!
