Ever since I was a little girl, I dreamed of making a jelly roll cake for the holidays. It’s been on my baking bucket list for years, but rolling a cake felt intimidating. When I came across this Nordic cake pan, I knew it was finally my chance to make it happen!

Initially, I planned to cover this cake with frosting and chocolate bark for a classic Yule log look. But once it came out of the oven, it was so naturally beautiful that I left it as is!

This chocolate cake’s secret ingredient makes it incredibly moist and flavorful: beets in the batter. They subtly enhance the cake without adding too much sweetness, creating the perfect balance with my decadent, smooth chocolate frosting.

The beets bring moisture and depth to the cake without being overpowering. The result is a rich yet dense texture that offers an exquisite blend of flavors.

Also, the nutritional value is incredible, even though you are devouring a dessert.

Beets are highly nutritious, low in calories, and packed with essential vitamins and minerals, such as folate, vitamin C, and potassium. They provide dietary fiber and natural sugars, making them a healthy addition to various dishes. Additionally, beets are rich in antioxidants and nitrates, which support heart health and help regulate blood pressure.

I didn’t frost the cake for this recipe, but I suggest covering your piece with frosting when you serve it.

There is no hint of the beet taste in this cake. The beets add a rich, moist flavor without adding a vegetable taste to the cake. 

Ingredients you’ll need

Cake

  • Cooking Oil
    Adds moisture and richness to the cake, ensuring a tender and soft crumb.
  • Sugar
    It sweetens the cake and balances the beets’ natural earthiness and the chocolate’s bitterness.
  • Eggs
    It acts as a binding agent and helps create structure, contributing to a light and fluffy texture.
  • Beets
    It adds moisture and a subtle depth of flavor while enhancing the cake’s moistness without overpowering the chocolate.
  • Unsweetened Chocolate
    It provides a deep, rich chocolate flavor that pairs beautifully with the beets.
  • Salt
    It enhances the overall flavor profile and balances the sweetness.
  • Vanilla Extract
    It adds warmth and aromatic notes, complementing the chocolate and beets.
  • Flour
    It forms the base structure of the cake and ensures a smooth, even crumb when sifted.
  • Baking Soda
    It acts as a leavening agent, helping the cake rise and achieve a light, airy texture.

Frosting

  • Unsweetened Chocolate
    It provides a rich, deep chocolate flavor that forms the frosting base.
  • Powdered Sugar
    Adds sweetness and creates a smooth, velvety texture in the frosting.
  • Hot Water
    It helps to dissolve the sugar and blend the ingredients smoothly for a consistent texture.

How to make this cake

Step 1 – Prep Pan
Spray Pam for Baking in Yule Log pan.

Step 2 – Sift Flour
Sift the flour and measure.

Step 3 – Prep Beets
Drain the beets and puree them in a blender.

Step 4 – Melt Chocolate
Melt the unsweetened chocolate over the stove or in a microwave.

Step 5 – Mix Dry Ingredients
Combine the flour, baking soda, and salt in a bowl.

Step 6 – Cream Sugar and Oil
In another bowl, cream the sugar and oil until well mixed.

Step 7 – Add Wet Ingredients
Add the eggs, pureed beets, and vanilla to the sugar and oil mixture.

Step 8 – Mix in Chocolate
Add the melted chocolate to the wet ingredients and blend well.

Step 9 – Combine Mixtures
Slowly add the dry ingredients to the wet mixture and mix until well combined.

Step 10 – Pour into Pan
Pour batter into the prepared cake pan.

Step 11 – Bake
Bake the cakes at 350°F for 50-60 minutes or until a toothpick inserted in the center comes out clean.

Step 12 – Cool Cake
Cool the cake on the rack for 10 minutes before removing them from the pan.

How to Make Frosting

Step 1 – Prepare Double Boiler
Add about two inches of water to a double boiler pot.

Step 2 – Place Chocolate in a Bowl
Place the chocolate in a heat-proof mixing bowl or saucepan.

Step 3 – Melt Chocolate
Set the saucepan with chocolate over the pot of hot water and melt the chocolate.

Step 4 – Mix Ingredients
Blend the melted chocolate, powdered sugar, and hot water using a handheld electric mixer.

Step 5 – Add Vanilla
Beat in the vanilla extract.

Step 6 – Incorporate Eggs
Slowly add the eggs, mixing well after each addition.

Step 7 – Add Butter
Remove the bowl from the stove and beat in the room-temperature butter.

Step 8 – Cool Over Ice
Place the hot bowl over another bowl that is half full of ice.

Step 9 – Beat Frosting
Beat the frosting at high speed until it becomes light and fluffy.

Step 10 – Frost Cake
Frost the cake.

This chocolate cake recipe is unbelievably moist and rich. This cake has a decadent old-time chocolate fortune frosting that pairs well with the cake. Its secret ingredient is cooked beets.

Ingredients

Cake

  • 1½ cup cooking oil
  • 2¼ cups sugar
  • 4½ eggs
  • 24 oz beets Canned beets drained and pureed in a blender
  • 3 ounces unsweetened chocolate
  • ¾ tsp salt
  • ¾ tsp vanilla extract
  • 2⅝ cup flour sift before measuring
  • 2¼ tsp baking soda

Chocolate Fortune Frosting

  • 5 ounces unsweetened chocolate
  • 4 cups powdered sugar sift before measuring
  • 4 tbs hot water
  • 2 egg
  • ⅔ cup butter room temperature
  • 2 tsp vanilla extract

Instructions

Cake

  • Sift flour and measure.
  • Cut and line two 9" cake pan bottoms with parchment paper.
  • Drain beets and puree in a blender.
  • Melt chocolate over the stove or in a microwave.
  • Mix flour, baking soda, and salt in a bowl.
  • In another bowl, cream sugar and oil until well mixed.
  • Add eggs, beets, and vanilla.
  • Next, mix in melted chocolate and blend well.
  • Slowly add the dry ingredients.
  • Place in two prepared cake pans.
  • Bake cakes at 350° for 25-35 minutes.
  • Cool cakes on racks and let cool for 10 minutes before removing from pans

Chocolate Fortune Frosting

  • Add about two inches of water to a double boiler pot.
  • Place chocolate in a heat-proof mixing bowl or saucepan.
  • Place the saucepan with chocolate over the pot of hot water and melt the chocolate.
  • With a handheld electric mixer, blend chocolate, sugar, and water.
  • Beat in vanilla. Slowly add the egg and mix well after each installment.
  • Next, take off the stove and beat in room temperature butter.
  • Place the hot pan or bowl over another bowl that is half full of ice.
  • At high speed, beat frosting until it is light and fluffy.
  • Frost the top of the first layer of cake. Add the second cake and frost the top and sides.
