vegan and gluten free cupcakes!
this weekend, my daughter had an old friend visiting from seattle. so, this morning they wanted to make cupcakes and i had a moment where i wondered if they should since it was going to be a hot day and i didn’t think we should heat up the house. but, quickly i realized baking would be the perfect activity for these preteen girls! my daughter has a dream to own a cupcake shop and have all her corgis at work… she is always talking about cupcake and corgis! well, they had the kitchen cleaned up and quickly had all the essential ingredients out on the counter before i was out of my shower! :o) so they used a gluten free cake mix that i had kicking around the pantry. i love this company, namaste. they make such a yummy gluten free brownie mix that would fool anyone that it doesn’t have wheat in it. next, they had to make a vegan batch since one of the kids has a dairy allergy. so, i happen to have a egg replacement product on hand. it is so amazing that you can accommodate so many dietary allergies!
just a note: i couldn’t find the paris cupcake paper liner package but i did find a cute fairy one! here is the link: cupcake package i was very impressed with the decorating items and the company, meri meri appears to have a huge inventory for most holidays, so have fun!
here are the happy girls. i had the cutest package of paris cupcake decorations and paper linings. they had so much fun making and decorating their cupcakes. and they were actually pretty yummy!
