Are you ready for the Best Ever Peach Buckle Recipe? Well, I adore peaches, and I thought why not take my blueberry buckle recipe and make it with peaches instead. So here are the results of my little experiment.

I wish I could say that I went out to the orchard, but since I just got back from a blogging conference in Atlanta, I opted for the store-bought peaches. But, I’m pleased with the results, and I hope you have a chance to make this fresh summer dessert.

I have fond memories of the peach orchards in Oregon. When we lived in Oregon, my mom and dad would come for a visit, and let me just say that my mom was a little obsessed with all the fresh farm fruit. We would fill the kitchen with all our harvest, and then we would get busy baking, canning, and jamming. She would start her baking shenanigans early in the morning and we would end in the evening with gorgeous jars of jams and pie fillings. When I was exhausted, she would enlist my father as her helper.

Well, now I carry on her passion for fruit, and so this month I created this yummy best ever peach buckle recipe. All her my mother’s summer visit will last in my mind as sweet memories of picking peaches, Vermont wild blueberries, Macintosh apples, strawberries, and raspberries. I’m sure I’m missing more fruit that she loved, but there isn’t enough space in this paragraph to write it. And speaking of fruit you might like my yummy mini apple custard tart.

Peach Buckle

This delicious peach buckle is a great solution for all your summer peaches. Top with a dollop of ice cream for the perfect summer dessert.

Ingredients

Peach Buckle Batter

  • 3/4 cup sugar
  • 1/4 cup Crisco
  • 1 egg whisked
  • 1/2 cup milk
  • 2 tsp baking powder
  • 2 cups flour
  • 1/2 tsp salt
  • 1 1/4 cups fresh peaches skinned and diced

Crumble

  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 tsp cinnamon
  • 1/4 cup butter softened

Icing

  • 3/4 cups powdered sugar
  • 1 1/2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 375 degrees Fahrenheit. 
  • Grease one 8"x8" pan.

Peach Buckle Batter

  • Cream together sugar, shortening, and the egg.
  • In a separate bowl mix together flour, baking powder, and salt. Stir into the sugar mixture, alternating with the milk. 
  • Stir in diced peaches and mix with the batter.
  • Pour cake batter into greased 8 x 8-inch pan.

Peach Buckle Crumble

  • Combine sugar, flour, cinnamon, and butter.
  • Mix with fingers until you have a sugar crumble. Sprinkle evenly over cake batter.
  • Bake at 375 degrees Fahrenheit for 25-35 minutes. 

Icing

  • Mix powdered sugar, milk, and vanilla extract until smooth.
  • Drizzle over the cooled peach buckle and serve with ice cream. 
  • Test doneness with a toothpick. It should come out clean when thoroughly baked. I found mine took 35 minutes to cook.
