Berry Cobbler Recipe (Easy and Delicious)

Use your favorite berry mixture for this easy summer dessert. This Mixed Berry Cobbler Recipe has a crisp, buttery topping with juicy sweet berries. It’s best to serve it up with a yummy scoop of vanilla ice cream, and this dessert is an instant favorite.

There is nothing quite as delicious as fresh fruit. And I love this recipe since it’s the right amount of berry tartness to sugary goodness. I think it was the crumble topping that won me over when I first tasted this cobbler. And I think you’ll agree with me that this is a keeper!

So, I got this recipe from a couple who we ended up befriending in a campground up in Lake Tahoe. Jeff made his fresh peach version in a dutch oven that he built with bbq briquettes. It was so delicious that I begged him for the recipe.

Well, come to find out, he had another cobbler version using mixed berries. And oh my goodness, it’s just as good as the peach cobbler.

Here are Some Helpful Tips About this Berry Cobbler Recipe

  • Berries

Use fresh berries when possible. And nowadays, the grocery stores have fresh produce year-round. But, in a pinch, you can use frozen. Just know that your cobbler will come out a bit moist.

But, choose your favorite berries to add to your fruit. I used a combination of cut-up strawberries, raspberries, and blueberries.

  • Cobbler Crumble

I accidentally experimented with the topping. I’ve made it where I combined all the ingredients and quickly tossed the crumble on top of the fruit. I mixed it but decided that I wanted the topping as a crumble-like texture. Then my brother made the topping for me and mixed it so much that he ended up with a big ball of dough. I must admit that I was worried the topping wouldn’t be crusty. Well, was I pleasantly surprised? His cobbler topping came out very caramelized and delicious. So, you can make it either way, but I prefer the over mixing the topping.

  • Variations Welcome

So, if you want a more significant layer of berries, that will make this berry cobbler delicious. And like I mentioned earlier, add whatever berry or fruit that you like to this recipe. I do like the almond extract but, maybe Vanilla or Lemon extract would be excellent too.

How to Make This Simple Fruit Cobbler

Step 1 – Butter a Baking Dish

Butter an 8″x11or 8″x 8″ or 7″x 11″ size pan. And preheat the oven to 375 degrees.

Step 2 – Prepare Berries

Wash berries and drain off water. Take half the berry mixture and place it in a bowl and mash them slightly. Then add ⅓ cup sugar to them. Now add the whole berries to the mashed berry mixture and gently mix with a spoon.

Step 3 – Drizzle Lemon Juice and Almond Extract Over Berries

Drizzle fresh lemon juice and almond extract over the berries. Mix the juice and extract into the berries.

Step 4 – Mix Crumble Topping

Sift flour and measure. In a bowl, add the sifted flour, sugar, salt, and one beaten egg. Mix thoroughly with hands until the crumble is a well-mixed ball.

Step 5 – Sprinkle Crumble

Sprinkle the crumble over the berries. And cover most of the berries. This crumble is delicious when it’s baked. It’s the perfect combination of crispy, sweet, and caramelized.

Step 6 – Drizzle with Melted Butter

Next, melt butter and drizzle it over the crumble.

Step 7 – Bake for 35-40 Minutes

Bake until the crumble is golden in color. Let cool a bit, and then serve slightly warm with a dollop of ice cream on top.

Ingredients

Berries

  • 3 cups berries You can use a variety of berries
  • 1 tbsp lemon juice fresh is best
  • ½ tsp almond extract
  • ⅓ cup granulated sugar

Crumble

  • 1 cup flour sifted and then measure
  • 1 cup granulated sugar
  • ½ tsp salt
  • 1 egg
  • 6 tbsp salted butter melted

Instructions

  • Preheat oven to 375°
  • Butter an 8"x 8" or 7"x 11" size baking dish.
  • Wash berries and drain off water.
  • Take half the berry mixture and place it in a bowl and mash them slightly.
  • Then add ⅓ cup sugar to them.
  • Add the rest of the berries and mix in the lemon juice and almond extract.
  • Place berries on the bottom of the buttered pan.

Crumble

  • Stir together sifted flour, sugar, salt in a bowl.
  • Add egg and mix with fork or hands. Knead well with hands until dough forms a ball.
  • Crumble the dough over the berries.
  • Melt butter and drizzle over the crumble.
  • Bake 35 to 40 minutes until golden and bubbly.
  • Serve warm or cold, and place a dollop of ice cream on top of the cobbler!

This cobbler recipe is now one of my family’s favorite desserts. My daughter doesn’t care for fruit pies, but I’m slowly winning her over. I guess subconsciously, and I’m trying to create fruit recipes to convert her to like them! She now loves this recipe and few others like my lemon sour cream pie and my peach cobbler.
