What Is Phyllo Dough Crinkle Cake?

Phyllo Crinkle Cake is a delicious dessert made from layers of thin, flaky phyllo dough crinkled up to create a beautiful texture. It’s baked with a sweet custard that seeps into the folds of the phyllo, making every bite crispy on the outside and soft on the inside. This unique and easy-to-make treat is perfect for anyone who loves a combination of crunch and creamy sweetness. Plus, it’s a real showstopper when served at gatherings or special occasions!

Ingredients You Need for a Phyllo Dough Cake

  • Phyllo Dough: Phyllo dough, known for its paper-thin layers, adds a delightful crispiness and texture to the crinkle cake, forming the perfect base for the rich fillings.
  • Butter: Used for crisping the dough, butter enhances the flavor of the phyllo layers, giving them a golden hue and a mouth-watering, buttery crunch.
  • Pumpkin Powder – Adds concentrated pumpkin flavor without extra moisture.
  • Eggs: Eggs are a crucial ingredient in the custard, providing structure and richness and helping to create a smooth, creamy texture that complements the crisp phyllo.
  • Milk: Milk is the backbone of the curstd, offering a subtle sweetness and creamy consistency that balances the cake’s textures and flavors.
  • Sugar (for custard): Sugar in the custard not only sweetens it but also helps achieve the perfect velvety texture, making it an irresistible cake component.
  • Cinnamon – Brings warm, cozy flavors that complement the pumpkin.
  • Vanilla (for custard): Vanilla adds a warm, aromatic flavor, elevating its taste and infusing the cake with a comforting, familiar essence.

Step-by-Step Instructions to Make this Pumpkin Cake

Preheat oven to 350 F

Step 1 – Thaw Phyllo Dough

Remove the phyllo dough from the refrigerator. Carefully remove it from the box and unwrap it from the plastic. Lay it out flat on a piece of parchment paper on your kitchen counter. Let it rest there until it reaches room temperature.

Step 2 – Folding Phyllo Dough
Line a baking sheet with sides with parchment paper.

To fold the dough, take two sheets and hold them with your hands on the long side. Grab about an inch of the dough below your hands and gather it together in an accordion-like shape. Continue gathering until you reach the end of the dough.

Place the crinkled dough on the baking sheet with the folds facing upwards.

Repeat this step with the sheets of dough until the tray is full.

Step 3 – Bake 10 Minutes

This is the first bake.

Step 4 – Melt Butter

While baking the crinkle cake, place the butter in a small saucepan and melt.

Once the cake is done, remove it from the oven and pour the butter evenly over it.

Step 5 – Bake 10 More Minutes

This is the second bake for another 10 minutes.

Step 6 – Make Custard


While the cake is baking, whisk together the eggs, milk, sugar, pumpkin powder, cinnamon, and vanilla extract in a medium-sized bowl.

After baking the cake the second time, remove it from the oven and evenly pour the custard.

Step 7 – Bake 30 Minutes

Bake for around 30 minutes, but keep an eye on the cake to prevent burning on top.

Ingredients

Phyllo Dough

  • 1 package phyllo dough

Melted Butter

  • 1 cup melted butter

Custard

  • 3 eggs
  • 1½ cup milk
  • 1½ cup sugar
  • 1½ tbsp vanilla extract
  • 1½ tsp pumpkin powder
  • 1½ tsp ground cinnamon

Instructions

    Folding Phyllo Dough

    • Line a baking sheet with sides with parchment paper. To fold the dough, take two sheets and hold them with your hands on the long side. Gently place the crinkled dough on the baking sheet with the folds facing upwards. Repeat this step with the sheets of dough until the tray is full.

    First Bake

    • Bake for 10 minutes.

    • While the crinkle cake is baking, melt the cup of butter in a small saucepan. Once the cake is done, remove it from the oven and pour the butter evenly over it.

    Second Bake

    • Bake for another 10 minutes.

    Make Custard

    • While the cake is baking, whisk together the eggs, milk, sugar, and vanilla extract in a medium-sized bowl. After baking the cake for the second time, remove it from the oven and evenly pour custard over it.

    Third Bake

    • Return the cake to the oven and bake for 30 minutes. Keep an eye on the cake to prevent burning on top. Remove the cake from the oven when it is brown and crispy on top.

    The Difference Between Phyllo Dough and Puff Pastry

    Phyllo dough and puff pastry are both flaky doughs, but they have key differences in preparation and texture. Phyllo dough is made from thin, almost paper-like sheets of dough with little to no fat between the layers. It creates crisp, flaky layers in desserts like baklava and crinkle cakes, often brushed with butter or oil before baking.

    Puff pastry, on the other hand, has layers of dough alternated with layers of butter. As it bakes, the butter melts and creates steam, causing the pastry to “puff” up, resulting in a light, airy texture. Puff pastry is much richer and more delicate, while phyllo dough is thinner and crispier.
