Almond Cookies
So, now that autumn has arrived, and the kids are back to school, I’m in the mood to bake cookies.
I like to make fresh cookies for my kid’s lunches, and these almond cookies are always a favorite in our house! Since this is my mother’s recipe, I thought it would be nice to name them after her.
She would be so tickled to know that her baking legacy lives on.
So, I remember her packing them in my lunch, and all my friends would want to swap with me. These cookies were such an incredible treat that I didn’t usually trade them with my friends.
Also, the cool thing about them is that they freeze well, so make a double batch and freeze some for later. You can freeze the dough or the baked cookie, whichever suits your fancy.
Amy's Almond Cookie Recipe
Almond Cookies are my family's favorite cookie. This recipe comes from my mom. It is easy to make and is a delicious and light cookie.
Servings: 24 cookies
Calories: 149kcal
Ingredients
- 1 cup Crisco
- 1 cup Sugar
- 1 Egg
- 1 tsp Almond Extract
- 2 cups Flour
- Pinch of Salt
- ¼ tsp Cream of Tartar
- 1 tsp Baking Soda
Instructions
- Cream Crisco and sugar until fluffy.
- Add egg and extract, and beat well.
- Sift dry ingredients and add to the cream mixture.
- Shape into ½ inch balls and place on an ungreased cookie sheet. Bake in 375° oven for 12-15 minutes.
- Take out of the oven and place warm cookies on cookie rack.

So, this recipe meets my three requirements for a good cookie. It is simple to make, yummy, and bakes the same every time. This recipe isn’t a complicated cookie, and they come out of the oven, all looking the same every time.

Finally found the perfect almond cookie recipe! I love the light and airy texture the shortening yeilds. Most of the recipes I found called for butter (delicious) but not that light crisp texture I was craving. Your mom’s recipe has now become a part of my own family’s recipes. This is a delightfully delicious almond cookie and very easy to make. My family loves the recipe as is, with one friend asking for more almond flavor. I liked them as they are also, so I will leave more almond flavor for her to try in her kitchen. This recipe will be made often in my home. I have also frozen the dough in small covered silicone ice cube trays that have 15 cavities. When you want fresh baked cookies in a hurry, simply pop them out of the freezer and onto a parchment lined cookie sheet. Let them sit for 20-30 minutes to soften and pop them in the oven. I found that cookies formed with a #50 or #60 Zeroll disher take about 10-11 minutes to bake (a little shorter than the recipe states). If you like almond cookies, you won’t be disappointed! These are delicious!! One of my mom’s friends used to make almond refrigerator cookies and yours are as close as I’ve been able to find to her recipe. Yours have the great almond taste but are much lighter than hers. I like yours better! I substituted butter for shortening, and everything else the same except I rolled the balls in red or green colored sugar for Christmas. My new favorite recipe!! Thanks so much for sharing!
