Chocolate Chip Cookie with Vanilla Pudding
this recipe has an unusual ingredient in it…vanilla pudding. i think it keeps the cookie moist and almost doughy! it is crisp on the outside and soft on the inside, which makes a nice combination. of course they freeze well, which is great for kids lunches. i feel like a squirrel getting ready for winter, i’m storing cookies and they are storing nuts. enjoy this cookie and thanks for visiting!
Chocolate Chip Cookies
1 cup and 2 tbs brown sugar
1 cup and 2 tbs white sugar
3 sticks of unsalted butter
1 large pkg vanilla instant pudding mix
3 eggs
4 cups flour
1 1/2 tsp baking soda
3/4 tsp salt
18 oz chocolate chips
nuts (optional)
Cream sugars and butter; add pudding mix and 1/2 tsp vanilla. Add eggs. Stir in dry ingredients. Fold in chips and nuts. Line cookie sheets with parchment paper. Bake at 375 degrees for 11-12 minutes. Cool on sheets 5 mins or more and then transfer to cooling racks to cool completely.
