Healthy Hummus

yummy hummus!
i never made hummus so i thought i would give it a try this weekend.  i’m not too crazy over the stuff, since it sometimes can be a little bland tasting.  once i made this recipe, i instantly fell in love with it.  i got the recipe off Engine 2’s website.  the great thing about this recipe is that it doesn’t have any oil and it still taste delicious.  the generous amount of garlic makes it very yummy!  i made it and quickly made the sandwich that Rip had created on a video i watched.  i’ll post a photo of the sandwich at the end.  here are the ingredients you’ll need.
Healthy Homemade Hummus
Ingredients:
2 cans chick peas, rinsed and drained
3 cloves garlic
Juice of 1 lemon
2 teaspoons ground cumin
2 teaspoons Bragg Liquid Aminos
1/4 cup water or vegetable broth
Instructions:
Blend all ingredients into a thick paste.
Variations:
Customize by adding one or more of the following:
2 tablespoons toasted sesame seeds
1 fresh jalapeno, seeded and chopped
1 roasted and chopped red bell pepper
1 cup dark or Kalamata olives
1 bunch fresh mint
1 cup fresh spinach
1 cup cooked eggplant
i barely had enough time to snap a photo of the sandwich that i made for my son.  it has hummus, guacamole, fresh spinach and cheese.  of course he now loves this sandwich and this is encouraging since all he talks about is eating bacon.  my interest in making more vegan meals is scaring him!  
i made it on my cast iron skillet and added another skillet on top with cans so to create my own pannini sandwich maker.  this is what Rip said to do if you didn’t have one of those fancy sandwich makers.  here is my homemade concoction! :o)
