APPLE CUSTARD CRINKLE CAKE

Ingredients for Filo Dough

  • Phyllo Dough: Phyllo dough, known for its paper-thin layers, adds a delightful crispiness and texture to the crinkle cake, forming the perfect base for the rich fillings.
  • Butter: Used for crisping the dough, butter enhances the flavor of the phyllo layers, giving them a golden hue and a mouth-watering, buttery crunch.
  • Apple: A thinly sliced apple layered within the cake introduces a sweet and slightly tart flavor, complementing the creamy custard and adding a fresh, fruity dimension to each bite.
  • Eggs: Eggs are a crucial ingredient in the custard, providing structure and richness, and helping to create a smooth, creamy texture that complements the crisp phyllo.
  • Milk: Milk is the backbone of the custard, offering a subtle sweetness and creamy consistency that balances the textures and flavors in the cake.
  • Sugar (for custard): Sugar in the custard not only sweetens it but also helps in achieving the perfect velvety texture, making the custard an irresistible component of the cake.
  • Vanilla (for custard): Vanilla adds a warm, aromatic flavor to the custard, elevating its taste and infusing the cake with a comforting, familiar essence.
  • Sugar and Water (for syrup): The combination of sugar and water, boiled into a syrup, is drizzled over the top of the cake, adding a sweet glaze that enhances the overall flavor and adds a delightful finishing touch.

Custard Crinkle Cake Step-by-Step Tutorial

Preheat oven to 350 F

Step 1 – Thaw Phyllo Dough

Remove the phyllo dough from the refrigerator. Carefully take it out of the box and unwrap it from the plastic. Lay it out flat on a piece of parchment paper on your kitchen counter. Let it rest there until it comes to room temperature.

Step 2 – Slice Apple

Wash, dry, and slice an apple. Remove the core from the middle. Thinly slice the apples and set aside for later.

Step 3 – Folding Phyllo Dough

Line a baking sheet with sides with parchment paper.

To fold the dough, take two sheets and hold them with your hands on the long side. Now, grab about an inch of the dough below your hands and gather it together in an accordion-like shape. Continue gathering until you reach the end of the dough.

Gently place the crinkled dough on the baking sheet with the folds facing upwards.

Repeat this step with the sheets of dough until the tray is full.

Step 4 – Insert Sliced Apples

Place slices of halved apple with the cut side facing down in the folds of the dough.

Step 5 – Bake 10 Minutes

This is the first bake.

Step 6 – Melt Butter

While the crinkle cake is baking, place the cup of butter in a small saucepan and melt.

Once the cake is done, remove from oven and pour the butter evenly over it.

Step 7 – Bake 10 More Minutes

This is the second bake for another 10 minutes.

Step 8 – Make Custard

While the cake is baking, whisk together the eggs, milk, sugar and vanilla extract in a medium size bowl.

After baking the cake for the second time, remove it from the oven and evenly pour custard over it.

Step 9 – Bake 30 Minutes

Bake for around 30 minutes, but keep an eye on the cake to prevent burning on top.

Step 10 – Make Sugar Syrup

In a small saucepan, mix together water and sugar, and heat it until it just begins to boil. Then, lower the heat and let it simmer gently while you get the other ingredients ready.

Keep an eye on the syrup; you’re aiming for a consistency that’s just a bit thicker than standard simple syrup. Once it reaches this point, turn off the heat but leave the saucepan on the stove for later use.

To check if it’s thick enough, try the thumb test: dab a bit of cooled syrup on your thumb and press it against your index finger. If it forms sticky strings when you separate your fingers, it’s at the perfect thickness and consistency.

Step 11 – Top with Syrup

After removing the cake from the oven, pour the sugary syrup over it and let it cool before serving.
