This Special Cornbread recipe comes from my mom, Amy’s recipe collection. It has only six ingredients that make it so simple to make. You’ll want to enjoy it with a bowl of soup or a warm bowl of chili.
If you like the old Marie Calendars cornbread, then you’ll love this. I believe that it’s even better than theirs. The only thing missing is their side of whipped butter with honey.
Special Cornbread
This recipe comes from my mom, Amy. It’s bittersweet posting it since she passed away in 2019. She loved to bake and cook and was always on the hunt for tasty recipes. Once you make it, you’ll agree that it’s the yummiest cornbread recipe ever!
And if you like quick breads, another favorite is my pumpkin bread recipe. It is moist and so packed with delicious pumpkin spices.
This recipe’s beauty is that it only has six ingredients, so, in a pinch, I can always make it since I usually have the ingredients in my pantry. Oh, yeah, did I mention that it is a crowd-pleaser, and you’ll be sharing this recipe with your friends?
I just made it today, and I used the baker’s refined sugar, and I noticed it came out fluffier and lighter than usual. We just had it with my crockpot chili, and the combination of the two was quite tasty. This cornbread will become a favorite in your collection. Enjoy, and thanks for visiting!
Amy's Cornbread Recipe
This cornbread recipe is flawless and comes out perfect every time. It is moist and sweet and almost like a cake. It pairs best with soups and chilis
Servings: 12 servings

Ingredients
- 2 cups buttermilk baking mix Bisquick
- 4-6 tablespoons cornmeal
- 1 cup sugar baker's fine sugar works best
- 2 eggs
- 1 cup milk
- 1/2 cup butter melted
Instructions
- Instructions
- Combine baking mix, cornmeal, and sugar in a bowl.
- Add eggs and milk. Beat until well blended.
- Mix in melted butter.
- Place in greased pan (9 in square).
- Bake at 350 degrees for 35-40 minutes or until a wooden toothpick comes out dry.

My mother was an avid baker and cook, and she handed her passion down to me.
When she was much younger, she collected a gazillion recipes and meticulously organized them in many notebooks. Once the family moved her out of her home and relocated her, those notebooks are nowhere to be seen. Someday they will show up, so I’m not giving up hope.

Alright, back to the cornbread, here is a quick note, make sure your Bisquick is fresh and not too close to the expiration date; otherwise, this cornbread will not rise as much.
