The lasts days of summer are winding down, and I recently enjoyed making this yummy Peach Cobbler with Almond Cookie Dough. So my new dessert it is a blend of delicious things, sweet summer peaches, and my Almond Cookie recipe.
This unique blend of peaches and almond will delight your taste buds. My husband gave my new creation a thumbs up. He happily likes being a member of my taste test kitchen, he always has his empty plate and fork in hand ready to taste my sweet concoctions.
Peach Cobbler with Almond Cookie Dough
This dessert is a subtle blend of delicious fresh peaches and almond. The cookie topping is a unique twist to a standard peach cobbler. Leave it to me to come up with something out of the ordinary! You might try my blueberry buckle if you like this recipe!
I know that I’m always curious about combining recipes and creating new ones. This new part of me recently blossomed, and I’m enjoying this phase of my life. While my family life is a bit chaotic, my husband is starting a new company, and my daughter is a full-blown teenager, I’m in the kitchen baking like a mad scientist.
Being in the kitchen and baking has always calmed my nerves, and when I nail a recipe, it feels so rewarding. The only downside to all my mad baking is that we are all stretching our pants, and strangely, our pants are shrinking.
Peach Cobbler with Almond Cookie Dough Recipe
Ingredients
Peaches
- 5 peaches peeled and sliced
- 2 tbsp sugar
Crumble Topping
- 1 cup shortening
- 1 cup sugar
- 1 egg
- 1 tsp almond extract
- 2 cups flour
- pinch of salt
- 1/4 tsp cream of tartar
- 1 tsp baking soda
Instructions
Peaches
- Peel peaches and slice all five peaches.
- Place peach slices on the bottom of a baking dish.
- Sprinkle 2 tablespoons of sugar over the peaches and mix.
Almond Crumble
- Cream Crisco and sugar until fluffy.
- Add the egg and extract, and beat well.
- Sift dry ingredients and add to cream mixture.
- Layer cookie dough on top of the peaches and cover thoroughly.
- Bake in a 375-degree oven for 40 minutes.
- Take out fo the oven and cool on a cookie rack. Serve with a dollop of vanilla ice cream.

Ah, a creamy, delicious dollop of vanilla ice cream and a cup of coffee makes me a very happy girl. I’ve been baking up a storm these past three days, and this peach cobbler with almond cookie dough is one of four creations. I’m so excited to share the other recipes, but I have to hold back that excitement.
