Our first encounter with a sandwich like this was at the San Francisco Airport.
The family and I were flying to Vermont for my father-in-law’s funeral. As we made it to our gate and had time to kill, we decided to grab some food since we knew it would be a long flight with no dinner served.
My husband tried something new and ordered a curried chicken sandwich. This order would become his favorite type of sandwich. We instantly knew that we had to remake the recipe!

It’s all about Thanksgiving leftovers at our house. I recently shared my Cranberry Grilled Cheese Sandwich recipe. That is delicious with homemade cranberry sauce or a jazzed-up canned cranberry sauce.
My husband loves sandwiches, so this curried turkey salad is a perfect addition to our lunch recipes.
Curried Turkey Salad Recipe
This delicious new version of a turkey sandwich is a fun twist for lunch. Use your leftover turkey from Thanksgiving to make this sandwich filling!
Ingredients You’ll Need:
- Turkey
- Sourdough Bread
- Curry Powder
- Mayonaise
- Sweet Relish
- Dried Cranberries
- Green Onions
- Celery
- Sliced Almonds
- Salt and Pepper
- Squeeze of Lemon
Recipe Notes
This recipe includes a couple of ingredients that you can tweak. So, stick to my measurements if you like your sandwich filling heavy on the mayonnaise. But if you want it a bit drier, then add less.
Add the cranberries, onions, almonds, relish, and lemon to taste. You can omit whatever you like based on personal preferences.
Also, if you want to substitute the turkey with chicken or tuna fish, that would work nicely.
Curried Turkey Salad
Ingredients
- 3 cups turkey or chicken (diced) 12 ounces
- 1 cup mayonaise
- 1 tbsp ground curry powder
- ½ cup celery chopped
- ¼ cup green onions finely chopped
- ½ cup dried cranberries chopped
- ½ cup sweet relish
- ½ cup sliced almonds
- salt and pepper to taste
- squeeze of lemon
- 4 slices sourdough bread
Instructions
- Chop and measure turkey, celery, green onions, and dried cranberries.
- Place all ingredients in a bowl and mix thoroughly.
- Spread over toasted sourdough bread.
- Makes 4 cups of turkey salad sandwich filling.
