Between our hikes, I’ve been having a blast in the kitchen with some fun baking. Now that we’re finally out of our rainy winter weather, I look forward to making some macarons. I’m unsure if humidity affects them, but I’m not taking any chances!

Just whipped up a Gluten-Free Lemon Drizzle Cake and realized I was out of buttermilk. So, I improvised by mixing milk with vinegar, and it turned out fantastic! The cake tasted and baked even better. I ended up tweaking the recipe a bit!
Here’s the DIY buttermilk recipe: combine 1/2 cup of milk with 1 1/2 teaspoons of white vinegar, let it sit for a few minutes to thicken, and you’re good to go!
That’s all there is to it, and there’s no need for an extra trip to the grocery store!
