It’s an easy cobbler with the benefits of being gluten-free! I love this crust more than the regular flour version.
The recipe includes my homemade gluten-free flour mix, which is the secret to the crispy topping!
Over the years, I’ve experimented with the gluten-free flour available in grocery stores, but eventually, I decided to make my own. I discovered a great combination of ingredients that bakes wonderfully in desserts. I initially used it in my Gluten Free Lemon Drizzle Cake which is crazy tasty!
So, using that same combination of ingredients made perfect sense to make this gluten-free cobbler!
My husband was skeptical when I set out to create this recipe. He loves my peach cobbler and didn’t believe I could top it. But to his surprise, he loved this new creation! The berries are juicy with a slight tartness, and the crispy topping pairs perfectly with the gooey fruit.

Step 1 – Prep Pan
Grease an 8-inch square baking dish.
Step 2 – Make Blackberry Filling
Combine the blackberries, sugar, cinnamon, and almond extract in a large saucepan. Cook and stir until the mixture boils.
Combine cornstarch and water until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2-5 minutes or until thickened.
Step 3 – Fill Baking Dish
Pour into prepared baking dish.
Step 4 – Make Topping
Stir together flour*, sugar, and salt in a bowl. Add egg and mix with a fork or hands. Mix well. Crumble the dough over the berries. Melt butter and drizzle over the crumble.
*Gluten Free Flour Mixture – Whisk rice flour, potato starch, tapioca flour, xanthan gum, almond flour, baking powder, and salt in a large bowl. Stir thoroughly and set aside the flour mixture.
Step 5 – Bake
Bake 35 to 40 minutes until golden and bubbly.

- 24 oz fresh blackberries
- 1 cup granulated sugar
- ¼ tsp ground cinnamon
- ½ tsp almond extract
- 3 tbsp cornstarch
- ¾ cup water

- 1 cup gluten free flour see notes to make the flour!
- 1 cup granulated sugar
- ½ tsp salt
- 1 egg
- 6 tbsp butter melted
Gluten Free Flour
- ½ cup sweet rice flour I use Mochiko Flour
- 3½ tbsp potato starch
- 1½ tbsp tapioca flour
- ¼ tsp xanthum gum
- â…“ cup almond flour super fine
- 1½ tsp baking powder
- ½ tsp salt

- Preheat Oven to 350°
