This cookie contains no wheat flour at all, which is a perfect gluten-free dessert. Instead, it’s a chewy and soft chocolate chip cookie that is simple to make with its whopping four ingredients.
I always love a gluten-free cookie recipe, and this one is among my favorites. When you taste this cookie, you’ll swear that it has flour in it. But the peanut butter and egg make the dough similar to a regular cookie. And while experimented, I omitted the baking soda, which created a flat and chewy cookie.
But, if you like a cookie that’s not so flat, add about a bit of baking soda to lift the cookie!
The bonus of this gluten-free peanut butter chocolate chip cookie is that you probably have all four ingredients in your kitchen right now. And bonus, they only take a couple of minutes to whip up and bake. Gluten-Free Peanut Butter Chocolate Chip Cookie Recipe
Ingredients
- 1 cup creamy peanut butter
- 1 cup light brown sugar firmly packed
- 1 egg large
- ½ cup chocolate chips you can add more if you like
Instructions
- Preheat oven to 350°
- Mix peanut butter, brown sugar, and egg in a bowl.
- Add chocolate chips and mix well.
- Form cookie dough balls and place them on an ungreased cookie sheet.
- Bake for about 9 minutes. Remove from baking sheet and cool on a cookie rack.
- Store in an airtight container.
