My husband is obsessed with making and eating French toast. He is the official French toast maker in the family. So, it’s a bit surprising that he didn’t create this recipe; instead, I did.
Also, he is a prominent critic of any French toast I make, so I do have a few of his helpful tips on this post. I had no idea all the little things he tweaked when making his breakfast.
Lately, I’m crazy about baking with pumpkin. Lately, I’m adding pumpkin to everything I bake. And I thought, why not tweak a few recipes my family loves?
So, one morning while my husband was making his weekend French toast, I added a bit of my pumpkin puree to a small part of his batter. Well, these French toasts stood out above and beyond. The pumpkin and the spices add so much richness to this breakfast.
I tweaked it more and found the happy blend of spices, eggs, milk, and butter.
Pumpkin Brioche French Toast Recipe
This is a pretty simple recipe and requires just a few ingredients. The eggs, cream, and spices blend are heavenly.
You can pour maple syrup on the top or get creative and add whip cream or pumpkin butter. Either way, it’s the perfect fall breakfast, in my opinion.
Let’s take a look at how to make this delicious breakfast.
Ingredients You’ll Need For this French Toast
Eggs
1/2 and 1/2 (or milk)
Canned Pumpkin Puree (make sure not to buy pumpkin pie filling)
Butter (for the batter and skillet)
Cinnamon
Nutmeg
Vanilla

Directions:
Step 1 – Melt Butter
Melt butter and place in a flat casserole dish. Allow butter to cool down before adding the other ingredients.
Step 2 – Mix Ingredients
Whisk eggs in a separate bowl and set aside. Once the butter is cooled down, add the 1/2 and 1/2 pumpkin puree, melted butter, cinnamon, nutmeg, and vanilla.
Step 3 – Prepare Your Griddle
Heat your pan on the stovetop on medium to low heat. Once heated, add a generous amount of butter. If the butter doesn’t melt immediately, your griddle is at the correct temperature.
Step 4 – Soak Bread in a Batter
Soak the brioche slices a couple at a time in the batter. Make sure the egg mixture coats both sides of the bread. Allow soaking each side in the batter for about 30-60 seconds. Tap off excess egg batter from the bread and place it on a well-buttered griddle.
Step 5 – Cook Toast
My husband couldn’t stress enough that the pan should be at low heat to cook the French toast evenly. If the temperature is too high, the outer surface will burn and the middle will be raw.
Cook each side for about two to four minutes. Again, make sure not to burn toast by watching the heat.

To freeze the French toast, place it in plastic wrap, tin foil, or a zip lock bag. Freezing French toast for about a month is optimal.
How to Reheat the French Toast
Our favorite way to reheat the toast is in our toaster oven. It takes about two minutes of cook time.
Also, you can pop them in your toaster like a slice of bread.
You can reheat it in a big oven. I like to cover it with tin foil to keep the moisture in the toast. Bake at 350 degrees until they are warm, about 10 minutes or so.

Batter
- 4 eggs lightly whisked
- 1 tbsp ½ and ½ milk can use whole milk
- ½ cup pumpkin puree
- 2 tbsp butter melted
- ½ tsp cinnamon
- â…› tsp nutmeg
- ½ tsp vanilla extract

- Melt butter and place in a slightly large bowl. Allow butter to cool down before adding the other ingredients.
- Whisk eggs in a separate bowl and set aside. Once the butter is cooled down, add the half and half, pumpkin puree, melted butter, cinnamon, nutmeg, and vanilla.
- Heat your pan on the stovetop on medium to low heat. Once heated add a generous amount of butter. If the butter doesn't melt immediately, You'll know if your skillet is at the correct temperature.
- Soak the brioche slices one at a time in the batter. Make sure the egg mixture coats both sides of the bread. Allow soaking each side in the batter for about 30-60 seconds. Tap off excess egg batter from the bread and place it on a buttered pan.
- Cook each side for about two to four minutes. Make sure not to burn toast and keep the heat low to medium.
- Serve with maple syrup and or powdered sugar and whipped cream.

What goes well with this French toast
One of the things we do with our leftover French toast is to make ourselves yummy peanut butter and jelly sandwiches.
Also, we have topped it with super yummy lemon curd.
Of course, just plain peanut butter without the jelly is tasty too.
While writing this post, the photos look so amazing that I wanted to eat some. I can taste all the unique pumpkin spices and maple syrup when I spy these photos.
Of course, I still have some pumpkin puree sitting in the fridge, so maybe tomorrow I’ll have it for my breakfast.
