Parmesan Crusted Halibut Recipe
This recipe is easy to make and such a favorite of mine. My sister-in-law is not a fan of fish, but after giving her this recipe, she converted! And she ended up making this recipe quite a bit.
So, if you have a person who isn’t too fond of fish, this dish will convert them into fans! I know since I’ve seen it before my own eyes!!!
What Makes This Recipe Special
I can say that I love how easy it is to make and that it tastes like a dish from a fancy restaurant. But let’s look at a few things I like about this recipe.
Pouches
En Papillote is the French term for baking in paper or parchment. The advantage of baking fish in these pouches is that they steam the fish, which tastes fantastic. For this fish recipe, I bake them in foil packets.
French Fried Onions
The French-fried onions create a crispy top when drizzled with melted butter.
Individual Sized Servings
Since you place them in tin foil packets, you know exactly how much each person gets. There are no surprises and everyone gets about the same-sized serving.
A Simple Recipe
It is a super easy recipe and once you make the sauce and prepare the packets, baking the fish is a whiz.
How to Make The Crusted Fish
Preheat oven to 450 degrees.
Step 1 – Make Sauce
Mix oil, lemon juice, salt, pepper, dry mustard, marjoram, and garlic powder in a small bowl. Set aside for later.
Step 2 – Create Tin Foil Packets
Make four tin foil packages for your fish. I usually double-line the pouches so that if they leak, the second layer of tin foil with catch it.
Step 3 – Prepare Fish
Cut and divide the fish into four equal parts. Place each fish in a tin foil pouch. Pour sauce over each fish and top with parmesan cheese and French fried onions. Drizzle melted butter over the cheese topping.
Seal up the fish packets and place them in a baking dish.
Step 4 – Bake Fish
Bake fish for 20 minutes in a 450-degree oven. Then after it’s cooked, open up the packets and place them back in the oven to crisp up the toppings.
Serve and salt and pepper to taste!
Parmesan Crusted Halibut Recipe
Ingredients
- 2 lbs halibut You can use Cod fillets as well
- 3 tbs cooking oil
- 1½ tsp lemon juice
- ½ tsp salt
- ⅛ tsp pepper
- ⅛ tsp dry mustard
- ¼ tsp marjoram
- ¼ tsp garlic powder
- ⅓ cup French fried onions
- 4 tbs grated parmesan cheese
- 3 tbs melted butter
Instructions
- Preheat oven to 450°
- Take four sheets of tin foil and make four fish pouches.
- Cut and divide the fish into four equal parts. Place each fish in a tin foil pouch.
- In a small bowl, combine oil, lemon juice, salt, pepper, mustard, marjoram, and garlic powder.
- Pour equal amounts of sauce over the four halibuts.
- Top each fish with crispy onions and parmesan cheese.
- Drizzle melted butter over the onions and cheese.
- Seal up each tin foil packet and place them in a baking dish.
- Bake in the oven for 20 minutes.
- After 20 minutes, open the foil fish packets and bake for another five minutes until the onions are crispy.
- Serve and salt and pepper to taste.

A Few Questions You Might Have
- If I don’t have halibut, can I use cod? Yes! Cod works just as well as halibut. Both these fishes are considered mild in flavor. Also, the cod is somewhat firm and won’t fall apart when baked. You can use tilapia, but it is fragile when baking, and it’s not as thick a steak as halibut.
- Can I make them in advance? I would leave out the parmesan, French-fried onions, and melted butter. Top them right before baking so that the ingredients don’t get soggy.
- Can I soak the fish in the sauce for a couple of hours? Yes! Soaking the fish will flavor the fish even more.
This is one of our favorite ways to prepare fish. And I love the individual-size pouches that pouch the fish.

If you can’t find halibut, don’t hesitate to use cod. In fact, I bake cod a lot since it is a bit cheaper. But, I do love the mild taste of halibut.
