This Week’s Tip – Lemon Curd TIP
I’ve always faced challenges cooking the eggs in my lemon curd recipe.
For those unfamiliar with homemade lemon curd, my recipe includes eggs. The process involves slowly cooking the eggs on the stove with room temperature butter, sugar, and egg until they form a wonderful, opaque, creamy sauce. However, more often than not, the mixture heats up too quickly, resulting in scrambled eggs.
The other day, feeling lazy, I skipped bringing the butter to room temperature and used cold butter straight from the fridge. Surprisingly, my laziness led to excellent results. The cold butter slowed the egg cooking process, preventing unwanted scrambling. It turned out to be a happy accident in the kitchen!
I promptly adjusted my recipe accordingly, so now you won’t have to worry about encountering the same struggles with making lemon curd that I have experienced over the years!

It’s been a rough week, getting back into the swing of things after our trip to Seattle and dealing with the time change from daylight savings. But hey, I made it through!
It feels good to be back home, making treats and getting crafty in my kitchen. I’m excited about what’s in store for future projects and balancing my time between cooking fun baking recipes indoors and enjoying the outdoor patio life.
