Whether you’re searching for an easy spring dessert, a pretty cake for a special occasion, or just a little baking inspiration to brighten these colder days, you’ll find plenty of lovely ideas here. I always think spring baking feels extra special — lighter flavors, soft colors, and simple touches that feel fresh and uplifting, even when it’s still chilly outside.
These cakes are a little promise of what’s to come: warmer days, longer afternoons, and plenty of reasons to gather, celebrate, and enjoy something homemade and sweet.

Spring baking is also about embracing the beauty of the season. As flowers bloom and the days grow longer, it feels natural to incorporate fresh and fragrant elements into your desserts.
Whether it’s a beautifully layered cake adorned with edible petals or a citrus-infused sponge that brightens your table, each recipe captures the essence of spring’s joy.
Spring cakes are also stunningly delicious because of their pastel colors and elegant textures. If you love spring cakes, my blog has many tasty recipes to celebrate the season sweetly!

A Personal Note from Janine

It’s been so cold here in Florida lately, which honestly feels a little unfair. I’ve been dreaming about spring nonstop — warmer temperatures, open windows, and a little color creeping back into everyday life. And I know many of you are dealing with snow and frigid weather too, so you’re probably just as ready for a change.
Even though we’re still bundled up, I can feel that warmer weather is on the horizon here, and it has me craving all things light, colorful, and cheerful. That’s where these spring cakes come in. They’re my way of bringing a bit of spring into the kitchen right now — pretty desserts topped with flowers, soft pastels, and flavors that feel fresh and happy.
So let’s turn up the oven, pretend winter is on its way out, and spend the weekend dreaming of spring together. 🌸🍰
Cheers,

Lemon Dump Cake is incredibly easy to make and tastes like lemon squares. The beauty of this dessert lies in its simplicity—it only has three ingredients. Bake this delightful treat, and you’ll have a delicious dessert reminiscent of lemon squares!

I love hydrangea flowers, so combining them into a beautiful cake would be nice. This hydrangea cake is simple to create but looks like it came from a fancy pastry shop. There is no need to pipe buttercream, as this recipe uses fondant and a hydrangea cutout for the blossoms.
This stunning flower cake is perfect for birthdays, showers, weddings, and more!

This Bee Hive Cake recipe and Nordic mold are absolutely adorable. I originally baked the honey lemon cake from Nordic but, I liked my cream cheese carrot cake recipe. Add some charming piped flowers for decoration to give this delightful cake an extra touch of cuteness.
I topped it off with some adorable candy honey bees for decoration, which added the perfect touch.

This delightful Phyllo Dough Crinkle Cake is creating quite a buzz in the baking world. It’s a simple yet stunning dessert that combines the crisp, flaky layers of phyllo dough with the rich, sweet taste of crinkle cake. A creamy egg custard elevates this recipe, making each bite a delicious fusion of texture and flavor.

I hadn’t heard of the Queen of Sheba Cake until I fell in love with Julia Child’s recipe. According to Julia, this cake tests a pastry chef’s ability to make a cake that doesn’t have a leavening agent.

Gluten Free Lemon Drizzle Cake
This smooth Gluten Free Lemon Drizzle Cake is wheat-free but tastes like it has wheat. It’s similar to a lemon pound cake recipe minus the wheat flour. The intense lemon flavor makes it the best lemon cake around.

Latest Obsession – Ninja Swirl Soft Serve Ice Cream Maker

Last week, I got to try out the new Ninja Soft Serve Ice Cream Maker, and I have to say—I’m impressed! It felt a little intimidating at first, but after going through the instructions once, it was super easy to use. The soft serve turned out delicious, and I love knowing exactly what ingredients are going into it. This little machine is impressive if you’re an ice cream lover and want to make your own at home!
This Week’s Tip – Springform Pans

This week, I made a cheesecake using a springform pan, and I have to say—it makes all the difference! Since the cake has a crumb base, the baked Oreo crust helped seal the bottom of the pan. I don’t have a ton of experience with springform pans, so I tested mine with water first and noticed some leaking. Lesson learned—a solid crust layer is key if you’re using one!
I love how easy it is to remove the cake with a springform pan—just unlock the sides, and you’re left with a perfectly intact cheesecake. No tricky flipping or transferring is needed!
