Springtime desserts are my favorites! With all this rain keeping me indoors, I’ve been happily holed up in my kitchen, baking away. It’s seriously one of the best ways for me to unwind.
This week, I made some exciting treats to share with you. First, I added a twist to a childhood classic – orange mochi! Imagine sweet mochi dough embracing a whole mandarin orange inside. It’s like a burst of sunshine and citrus in every bite.

I’ve always struggled with melting chocolate meltaways. Anyone who’s attempted to melt these chocolate wafers knows the frustration all too well.
Usually, I’d end up overcooking them in the microwave, resulting in a solid lump of chocolate. It was beyond frustrating!
But guess what? I’ve finally cracked the code to melting chocolate perfectly every time. And I’m thrilled to share my newfound knowledge with you so you can easily conquer your chocolate dessert endeavors!
How To Melt White Chocolate
- Add Shortening: Incorporate a small amount of vegetable shortening into the chocolates before melting to help them achieve a smoother consistency and prevent them from seizing in the microwave.
- Use a Microwave-Safe Bowl: Ensure the bowl is microwave-safe to prevent any potential hazards or uneven heating.
- Microwave in Short Intervals: Heat the chocolates in short bursts of 15-20 seconds, stirring between intervals to prevent overheating.
- Stir Frequently: Stir the chocolates thoroughly after each heating interval to distribute the heat evenly and avoid hot spots.
