Springtime desserts are my favorites! With all this rain keeping me indoors, I’ve been happily holed up in my kitchen, baking away. It’s seriously one of the best ways for me to unwind.

This week, I made some exciting treats to share with you. First, I added a twist to a childhood classic – orange mochi! Imagine sweet mochi dough embracing a whole mandarin orange inside. It’s like a burst of sunshine and citrus in every bite.

Then there are my peeps cookies over on my Instagram feed. They were such a hit. I just had to bring them over here for you all to enjoy.

Last but not least, I’ve got a new take on Easter chocolate bark that is as delicious as it sounds!

Yep, it’s been a wild week of baking adventures, but now I’m ready to kick back and relax this weekend. But once I take a day off, I’m ready to begin my spring crafting next week!

I made this recipe recently and fell in love with the buttery, sweet graham cracker crust! It combines well with the chocolate topping.

And when it comes to the topping, let’s not forget the joy of adding colorful Easter candy—it’s simply a blast! Get your kids or grandkids involved in making this cute treat—it’s sure to be a hit with the whole family!

This Week’s Tip – Melting Chocolate

MELTING CHOCOLATE IN THE MICROWAVE

I’ve always struggled with melting chocolate meltaways. Anyone who’s attempted to melt these chocolate wafers knows the frustration all too well.

Usually, I’d end up overcooking them in the microwave, resulting in a solid lump of chocolate. It was beyond frustrating!

But guess what? I’ve finally cracked the code to melting chocolate perfectly every time. And I’m thrilled to share my newfound knowledge with you so you can easily conquer your chocolate dessert endeavors!

How To Melt White Chocolate

  • Add Shortening: Incorporate a small amount of vegetable shortening into the chocolates before melting to help them achieve a smoother consistency and prevent them from seizing in the microwave.
  • Use a Microwave-Safe Bowl: Ensure the bowl is microwave-safe to prevent any potential hazards or uneven heating.
  • Microwave in Short Intervals: Heat the chocolates in short bursts of 15-20 seconds, stirring between intervals to prevent overheating.
  • Stir Frequently: Stir the chocolates thoroughly after each heating interval to distribute the heat evenly and avoid hot spots.
  • Stop Heating Before Fully Melted: Remove the chocolates from the microwave when small chunks remain, as the residual heat will continue melting them as you stir.
  • Be Cautious with High-Power Settings: Avoid using high-power settings on the microwave, which can quickly overheat and burn the chocolates.
  • Use Fresh Chocolate: Opt for fresh, high-quality chocolate for the best melting results, as older chocolate may have a drier texture and be more prone to seizing in the microwave.

I’ll admit it, I’ve got a bit of an unusual obsession with cookie cutters. There’s just something magical about how they can transform a simple sugar cookie into the most adorable shapes.

Recently, I got my hands on this peeps cookie cutter, and let me tell you, it’s been a game-changer. With a bit of colored icing and matching sugar sprinkles, you can whip up the cutest cookies that make perfect gifts for friends!

Btw, I just bought a goldfish cutter. I plan to make homemade goldfish crackers! So stay tuned for the recipe.

Hopefully, the rain will let up this weekend, giving my husband and me a chance to spend time in our garden. We’ve got a bunch of flowers ready to plant, along with some flower seeds we picked up.
