We’ve been in full renovation and move-in mode over here with the new house, which means most of our dinners lately have been quick and easy. Between paint, boxes, and all the little projects that pop up, cooking a big meal sometimes feels like a luxury. But honestly, I’m really missing those relaxed, home-cooked dinners we used to enjoy, and I can’t wait until we’re fully settled and back into that rhythm.
I did manage to cook a few real dinners recently, though, and wow… it made such a difference. There’s just something about a homemade meal at the end of a long day that feels grounding and comforting. Even a simple dinner can turn a hectic day into a cozy night.
That’s why I’m so happy to share some of our favorite easy dinner ideas with you today — along with a few behind-the-scenes photos of our house as it slowly comes together. It’s definitely a work in progress, but it’s starting to feel like home.
