Saturday Chitchat with Janine – Volume 213
My Go-To Summer Cookie Favorites
One of my all-time favorite summer cookies is a classic lemon sugar cookie—soft, chewy, and just the right amount of tangy.
I also love baking white chocolate raspberry cookies, which combine creamy sweetness with tart berry flavors.
When I’m in a tropical mood, I go for pineapple coconut cookies that feel like a mini vacation in every bite. These are the kinds of cookie recipes for summer that make baking fun and sharing even better.
Baking Memories in the Kitchen
Summer baking always feels a little more laid back to me.
I’ll throw on some music, open the windows, and whip up a batch of something sweet with my daughter. Cookies are the easiest way to turn a regular day into something special. They come together quickly, and the whole kitchen ends up smelling amazing.
Plus, cookies are easy to pack and share—whether it’s for a neighbor, a family road trip, or a poolside snack.
Cookies That Go Beyond the Season
While these may be labeled as summer cookies, I’d be lying if I said I only made them during the summer.
Some of my favorite summer cookie recipes sneak into my baking year-round because they’re just too good not to. And honestly, nothing brings a bit of sunshine into a rainy day quite like a lemon cookie or a bite of coconut bliss.
Summer flavors have a way of lifting your spirits, even if it’s not technically summer anymore!
A Personal Note from Janine

Mother’s Day always brings a mix of emotions for me. I miss my mom so much, especially because she played such a big role in shaping my love for baking. She was always in the kitchen, trying new recipes, baking nonstop, and usually getting ready for some gathering she was hosting. There was always something sweet coming out of the oven.
This time of year makes me think of her even more since her birthday was in May too. Life looks a little different now, with our kids living in another state, but I’m holding onto those memories and the traditions she passed down.
So today, I’m celebrating her in my own way—with something homemade and sweet from the kitchen, just like she would have done.
Wishing you all a Happy Mother’s Day. 💛
Cheers,
