The endless and delicious possibilities!
One of the most exciting aspects of gluten-free cooking is the opportunity to discover new and exciting ingredients.
Creating these recipes isn’t just about health benefits for me; it’s also about the joy of cooking for my daughter.
So, gluten-free recipes are an excellent option for managing a gluten allergy or wanting to embrace a healthier lifestyle.
They encourage you to explore new flavors, experiment with wholesome ingredients, and create nutritious and delicious meals.
The best part is the joy it brings my daughter and the sense of accomplishment I get from making her favorite dishes.
A Personal Note from Janine
What do you find relaxing?
My favorite thing to do is bake and cook! Even on vacation, you’ll find me in the kitchen creating new dishes. I fondly remember a trip to Montana where our cabin didn’t have any Wi-Fi or cell reception, so we had no choice but to enjoy some non-electronic activities.
I happily baked to my heart’s content, enjoying the lack of distractions and the freedom to invent delicious recipes. I really need another trip to that cabin. My husband would love a last-minute getaway to flyfish his favorite Montana river! He can walk right out the door and onto some wonderful fishing pools.
In the meantime, I’m excited to share my culinary creations with you. If you’re not gluten-free, substitute your regular flour; everything should turn out great!
If you’re new here, welcome! And to those who regularly check-in, welcome back. Pull up a chair, and let’s hang out on this beautiful Saturday!
Cheers,

Gluten-Free Peanut Butter Chocolate Chip Cookie
This recipe is the best Gluten-Free Peanut Butter Chocolate Chip Cookie. It also has the best ingredients since it only has four. I have always loved gluten-free cookie recipes, and this one is one of my favorites. When you taste this cookie, you’ll swear it has flour. This gluten-free apple crisp combines soft-baked apples flavored with maple and warm spices with a crumbly oat topping. Instead of using all-purpose flour, combine almond meal and oats. Almond meal adds a lovely texture and delicious nutty flavor. To keep the recipe gluten-free, make sure you’re using certified GF oats. This is a beautiful alternative to my regular apple crisp recipe.

This Week’s Tip – My Gluten-Free Flour Mix
Over the years, I’ve tried store-bought gluten-free flour but was never satisfied with how my baked desserts turned out. So, I got to work and created my blend of flour and starches.
I’ve come up with a mix that yields 1 cup and another that yields 2 1/2 cups, and I always keep a batch on hand for my recipes. If you’re baking gluten-free, try making a batch and storing it for your baking needs! It keeps everything moist and crispy. I love my gluten-free flour blend!
Latest Obsession – Butter Dish
I bought this butter container last winter and was thrilled to discover that it keeps butter fresh at room temperature. All I have to do is place a stick of butter inside and secure the lid with its silicone ring, which helps preserve the butter for longer.
The butter stays fresh and soft without using a butter bell’s water system. The real test was how it would hold up in the hot summer and pass with flying colors! The butter stayed fresh and was much easier to manage than a butter bell.
Long story short, I love this butter container. Plus, it comes in eleven fun colors!
