  • 2 tbsp honey
  • 3 tbsp maple syrup
  • ⅓ cup olive oil I use light olive oil
  • ¼ cup freshly squeezed lemon juice (about 2 lemons)
  • zest of 2 lemons
  • 1 tsp vanilla extract
  • 1 cup grated zucchini (no need to peel; squeeze out excess moisture with a towel)a

  • ½ cup powdered sugar
  • 1-2 tbsp lemon juice
