Hey everyone!

How is everyone doing after the holidays? My family has many leftovers, trees still up, and presents to enjoy.

Life is good despite the quick transition of Christmas to New Year’s in the Waite house.

I still have my winter wonderland scene in the living room to keep admiring the twinkling lights a little longer 🙂

But this post isn’t about Christmas. Let’s talk about the new year.

You all know I love to bake, so here are a few delicious dessert recipes from my kitchen to yours that I love to bake for loved ones!

Happy New Year’s Eve!

This week I was busy in the kitchen inventing new recipes. I love baking and cooking if you haven’t noticed. I’m happiest in the kitchen.

Over the holidays, my daughter inspired me to create these decadent gluten-free brownies. I’m happy to report that there is no hint that they are different from regular flour brownies. This dessert has a layer of chocolate chip cookies and gluten-free Oreos and is topped with my yummy brownie recipe.

It’s pretty rich, to say the least. So, I slice them up thinly and nibble on these desserts from time to time. And then, I’m off hiking the hills the rest of the day, trying to burn off the calories!

But I promise to make some healthy dinner and lunch recipes in the New Year! My husband and I love salads, so you can bet I’ll be sharing our yummy recipes with you.

In the meantime, enjoy this special edition of New Year’s desserts!

Gluten Free Slutty Brownies

Apple Dutch Baby Recipe

It’s an oven-baked pancake that’s easy to make, and you can serve it for breakfast, brunch, and dessert. It’s a light custard-like souffle topped with cinnamon and nutmeg-drenched apples.

This Week’s Tip – Butter for Baking

Room Temperature Butter

We all know butter sometimes needs to be at room temperature before adding it to your batter. And the best way to achieve this process is to leave it on your kitchen counter for an hour or so.

But, sometimes, we are in a hurry and don’t have an hour to spare. So, here are a few ways I soften my butter.

  • Slice up the stick of butter into pats and lay it out on parchment paper. (Softens in 5-15 minutes)
  • You can also cut the stick of butter into small cubes, and it will reach room temp even quicker. (Softens in 5-15 minutes)
  • Grate the butter. (Softens in 5 minutes)
  • Pound the butter in a plastic Ziploc bag. (Softens in 5 minutes)
  • Place 2 cups of water (use a pyrex measuring bowl) in your microwave and bring it to a boil. Then remove the water and place your pats of butter (on a plate) in the microwave and close it. Leave it in the oven for 10 minutes.

Latest Obsession – My Fave Cookbook

Awesome Cookbook

I love Tieghan’s recipes and check out her website quite often. I have many of her recipes printed out, all clumped together in a folder.

Well, my sweet daughter gave me her cookbook for Christmas, and I love it! I made the Zuppa Toscana soup the other day, and it was a hit with my family. Tieghan’s recipes are on par with restaurant recipes, and I love that we don’t eat out quite as much anymore.

This cookbook is a must for any kitchen!
