I’m sure many of you are sticking to New Year’s resolution diets, but I’m all set to take a little break for Valentine’s.
I’ve been a big fan of sweets since I was a kid, and now baking is my go-to for some relaxation. It’s like my creative outlet.
In my downtime, I’m all about ‘The Great British Baking Show.’ Oh, and I’ve recently started enjoying ‘Junior Bake Off’ too – it’s really fun with some cool baking projects. I’m planning to whip up a special cookie next week, so keep an eye out for that.

This Week’s Tip – Melting Chocolate
Melting Chocolate
The other day, I had a bit of a mishap while trying to melt chocolate on the stove using a double boiler. Perhaps the temperature was too high, because the chocolate melted quickly and then, unfortunately, burned.
I switched tactics and used my microwave, melting the chocolate in a Pyrex measuring cup, and it worked out perfectly. So, the microwave can be an excellent option for anyone who finds melting chocolate a bit tricky. Here are some tips to help ensure your chocolate melting is successful.
- Advantage: It’s quick and convenient.
- Prep Chocolate: Chop the chocolate into even, small pieces and place it in a microwave-safe bowl.
- Cook and Check: Heat it in short bursts (about 15-20 seconds), stirring between each burst to ensure even melting. Once it is mostly melted, remove and stir the chocolate. It will melt those last few bits just from the residual heat.
- It Can Burn: Be careful not to overheat, as chocolate can still burn in a microwave.
Latest Obsession – Pastry Class (Macarons)
I just attended a live Zoom class taught by Molly, where she showed us how to make her delicious macarons. I was full of questions and learned so much! This experience inspired me to update my recipe soon – I’m obsessed and can’t wait to try making these little gems myself.
